Sales of organic meat and poultry grew more than 17\npercent to $991 million in 2016, marking the\ncategory\u2019s biggest yearly gain.<sup>2<\/sup> <\/li>\n<\/ul>\n\n\n\n<p>Antibiotics use in\nanimal production has undergone considerable change as the industry works to\naddress consumer preferences and meet the requirements of the Veterinarian Feed\nDirective. As antibiotics are phased out of livestock production, it\u2019s important\nto take steps to strengthen the animal\u2019s immune system and ability to respond\nto a bacterial challenge. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-trace-minerals-vs-antibiotics-in-animals\">Trace Minerals vs. Antibiotics in Animals<\/h2>\n\n\n\n<p>With\nthe reduced use of antibiotics, producers should be incorporating performance\ntrace minerals into livestock diets to enhance animal immunity and resistance\nto infection, bacteria, toxins and pathogens. <\/p>\n\n\n\n<p>The\nlining of the intestinal tract is comprised of a layer of epithelial cells.\nThese cells are bound to each other by complex protein structures called \u201ctight\njunctions,\u201d and their role is to prevent bacteria, pathogens and toxins from\npassing through the intestinal lining and into the bloodstream. In the same way, the skin of the animal is comprised of epithelial\ntissue and provides a physical barrier between the animal and its environment,\nprotecting the animal from bacteria and physical injury. <\/p>\n\n\n\n<p>Trace\nminerals, such as zinc, have been shown to strengthen the tight junctions between\nthe epithelial cells, helping protect the intestinal tract and skin from\ninfection. <\/p>\n\n\n\n<p>Both the level and the source\nof zinc in animals\u2019 diets are critically important\nfor the healing process of skin (Lansdown et al., 2007). For example, the\npercentage of broiler chickens affected by cellulitis, using a challenge model,\nwas decreased from 52 to 40 percent when diets were supplemented with 40 ppm of\nzinc as zinc amino acid complex. Another study showed improved footpad\nintegrity, with 50 percent versus 30 percent of birds having normal footpads\n(Downs et al., 2000; Saenmahayak et al., 2010). <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-immune-cell-function\">Immune Cell Function<\/h2>\n\n\n\n<p>If pathogens and toxins manage to penetrate the surface barriers and access deeper lying tissues, then immune cells such as white blood cells will be called into action. This process is commonly called immune activation or inflammation. <\/p>\n\n\n\n<p>Macrophages, a type of\nwhite blood cell, engulf and destroy foreign matter such as bacteria (e.g., <em>Escherichia\ncoli<\/em>) and cellular debris and, thus, play a crucial role in inflammation.\nComplexed trace minerals are essential for mounting a proper immune response\nthrough the multiple roles they play.<\/p>\n\n\n\n<p>Zinc is essential for the proliferation and proper function of immune cells (Rink and Gabriel, 2000). <em>E. coli <\/em>cleared faster from the blood of three-week-old turkeys when the diet was supplemented with 40 ppm of complexed zinc (Kidd et al., 1994). However, the role of complexed trace minerals goes beyond stimulating the activity of immune cells; it includes protecting the host from toxic substances formed by macrophages. <\/p>\n\n\n\n<p>Macrophages use\nsuperoxide to destroy pathogens and other foreign substances. Superoxide,\nhowever, is also toxic to host cells and, therefore, needs to be converted to\ncompounds that are less toxic.
